Step 1: In a large slow cooker combine the first 8 ingredients (- beans); stir to combine and then add the chicken and stir again. Coon on high for 4-6 hours or on low for 6-8 hours.
Step 2: Stir in scallions and lime juice just before serving. season with salt.
Step 3: Serve with shredded cheese and sour cream on the side.
