Step 1: In a large pot over medium heat fry the bacon until browned. Add the vegetables (onions - celery) and cook until onions are tender. Str in ham, lentils and spices (salt - bay leaves) and 8 cups of water. Cover, simmer over low heat for one hour or until lentils are tender. Discard bay leaves. add lemon juice and more salt if desired.
