Step 1: Hummus ... Obviously, you can make your own; but, I took advantage of a good store brand, to make this quick and easy.
Step 2: Cucumber ... First, cut a thin slice off of one side of the cucumber. Then, using a peeler (my choice), or a mandolin; cut long thin slices. Set them on a paper towel to dry.
Step 3: Filling ... Add the Feta cheese to a small bowl or dish; and, break it up using a fork. Then, add the hummus, and mix until combined. In a second bowl; add the roasted red peppers and tomatoes, and mix.
Step 4: Finish ... Simply season the cucumber with just a pinch of salt and pepper. Then, spread the hummus/Feta mix (a thin coat) on the cucumber; but, don't go all the way to end - this way, the filling won't "squish" out when it is rolled. Top with the sundried tomato/pepper mix; and, a very light drizzle of olive oil. Roll and secure with a toothpick. Done!
Step 5: Serve and ENJOY! ... Cover well with plastic wrap, and refrigerate until good and chilled. Easy, delicious; and, a great appetizer any time of the year. Perfect for potlucks, parties, game nights, etc. Also, it's a plus being gluten free, low fat, and healthy too; but, you would never know it.
