Step 1: In a skillet over medium heat,
Step 2: Saute the onions, garlic and mushrooms until soft. Remove from heat.
Step 3: Place ground chuck and pork in a mixer bowl with paddle attachment on low speed, add vegetable mixture, tomato puree and eggs.
Step 4: When liquids are incorporated, add breadcrumbs and salt and pepper mix.
Step 5: Run machine until mixture comes completely together.
Step 6: Place mixture into greased loaf pans, filling halfway.
Step 7: Bake in preheated 350-degree oven for about 35 minutes to an internal temperature of 150 to 160 degrees. or until done.
Step 8: Let cool slightly and remove meatloaves from pans.
Step 9: Slice to serve.
