Step 1: Place the stock, tomato passata, sugar, salt and pepper in a large saucepan over medium heat and bring to a high simmer.
Step 2: Add the tortellini and cook following packet instructions or until al dente.
Step 3: To serve, spoon the tortellini among serving bowls and pour over the soup and sprinkle with basil and serve immediately.
