Step 1: In a bowl mix together the 5 ingredients (hazelnuts - salt).
Step 2: In a small bowl blend together the butter, vanilla and cinnamon. Add mixture to the hazelnut mixture and blend well. Add whites and mix until smooth. Chill for 30 minutes.
Step 3: Preheat oven to 400 degrees F.
Step 4: Line baking sheets with foil and drop batter onto prepared baking sheets by the half teaspoons, spacing 2 inches apart. Dip small metal spatula into cold water and use it to spread cookies to the width of 1 1/4 inches, moistening spatula with each cookie.
Step 5: Bake until cookies are golden and 2 inches wide (7-10 minutes). Cool before serving.
Step 6: Cookies can be prepared one week ahead and stored in airtight container at room temperature.
