Step 1: Cheese ... I prefer to grate my own; but, it isn't necessary. Add all the cheeses to a food processor.
Step 2: Horseradish ... I prefer to use fresh horseradish and grate it myself. You can always use a prepared horseradish. A prepared horseradish does have a bit of vinegar in it; but, I find that really either one will work. Add the horseradish as well to the food processor with the cheese; then, pulse until creamy and smooth.
Step 3: Mustard ... This is optional. Sometimes I add it, sometimes I don't. It is all a personal taste.
Step 4: Finish ... Once everything is combined, transfer the cheese to a small bowl or container (rubbermaid like); and, refrigerate over night, or at least all day before serving.
Step 5: Serve and ENJOY! ... Serve with your favorite crackers or a vegetable platter. This also makes a nice Christmas gift too, as I mentioned.
