Step 1: Spray a skillet lightly with oil and fry the diced tofu, medium heat, turning frequently until browned (apprx 6 minutes)
Step 2: Set the tofu aside to cool
Step 3: Combine the cuke, radish, tomato, water chestnuts, soy sauce, hot sauce & lemon juice
Step 4: Add tofu & peanuts just before serving
Step 5: Have the lettuce leaves arranged on a large platter with a bowl of the veggie mixture
Step 6: To serve have the guest spoon 2 tables spoons of the veggies on a lettuce leaf, roll the leaf like a burrito & enjoy
