Step 1: Place the carrots & Parsnips on an oven proof tray, lightly sprayed with oil.
Step 2: Mix together the dressing, zest & cayenne pepper.
Step 3: Pour over the prepared carrots & parsnips.
Step 4: Toss to coat evenly.
Step 5: Bake 20 minutes in 425 oven.
Step 6: Add apples.
Step 7: Sprinkle on the cheese.
Step 8: Bake for a further 15-20 minutes or until the veggies are tender.
