Step 1: Bring all cheeses to room temperature; combine and beat with an electric mixer till well-blended.
Step 2: Add pimentos, green pepper, and onion; chill overnight.
Step 3: Serve with a variety of crackers; tastes best when brought to room temperature.
Step 4: This freezes pretty well for a short time.
