Step 1: Saute veggies in oil, add rest of ingredients. Simmer sauce 15 minutes. Remove bay leaf.
Step 2: Divide eggs in half, mash everything but whites. Stuff into eggs.
Step 3: Plate 1 cup rice then pour sauce over rice. Top with 1 egg.
Step 4: Serve with shrimp on sides.
