Step 1: Process flours, oats, cornmeal, baking soda, baking powder and salt in a food processor fitted with a steel blade, then add in butter pieces and process until it resembles coarse meal
Step 2: Beat eggs and buttermilk together in a large bowl, beat in honey; then stir in flour mixture and fold in pecans (if using)
Step 3: Heat griddle; brush with oil or butter; ladle batter on griddle to make 6" cakes, cook until golden brown on both sides.
Step 4: Serve with your choice of syrup, may I suggest using maple pecan syrup? Delish
