Step 1: In a bowl, combine first 8 ingredients, mixing very well.
Step 2: Shape into 2 balls.
Step 3: Roll the balls into chopped nuts, then roll in parsley.
Step 4: Chill at least 4 hours (the longer is better).
Step 5: Serve with crackers.
