Step 1: Combine dry ingredients (flour - salt) in a large bowl or in the pan of a bread machine. Add next 4 ingredients (- milk). Cover and let dough rest for 30 minutes. If using a bread machine set on dough cycle and press start - machine will complete cycle.
Step 2: To knead - after the dough rests turn it out on a floured board and knead for 10 minutes - adding a tablespoon or so of water if dough feels dry - it should feel slightly sticky and soft. Place dough is greased bowl, turn to coat. Cover and let rise until doubled in bulk (1 1/2 -2 hours)
Step 3: Whisk together the dry ingredients (sugar - cinnamon). Toss apples with lemon juice and then add to the sugar mixture. Mix well and set aside.
Step 4: Divide dough in half and turn out onto a lightly floured board.
Step 5: Roll first half into a 10 x 12 inch rectangle, spread half of the filling over the dough, leaving a 1/2 inch margin along the sides.
Step 6: Starting with a long side, roll the dough into a log, sealing the edge. Use a pizza cutter or sharp knife to cut the log in half lengthwise. Place the half logs, filled side up, side by side on a parchment-lined baking sheet. Keeping the filled side up, twist or "braid" the two logs together. Pinch ends together. Repeat with second piece of dough. Cover with greased plastic wrap and let them rise for 1 hour or until puffy.
Step 7: Preheat the oven to 350 degrees F. Remove plastic wrap and bake for 30-40 minutes or until lightly browned. Check loaves after 20 minutes and tent with aluminum foil if browning too quickly. Remove from oven and let cool for 1 hour before glazing and serving.
Step 8: Mix all glaze ingredients together and drizzle over the loaves.
