Step 1: Sauce ... Add the cranberries, wine, honey, olive oil to a pot; and, bring to medium high heat. Then, reduce to low; and, simmer for 10-15 minutes until the cranberries begin to pop and break down. Once the sauce begins to thicken, season with salt and pepper; just a pinch - and remove from the heat to cool.
Step 2: Store ... Once the sauce had cooled, store in a mason jar or tupperware container. Will last up to 2 weeks in the refrigerator.
Step 3: Serve and ENJOY! ... As mentioned; not really a classic Thanksgiving cranberry sauce. But, I love to serve this with turkey or chicken other times of the year. Nut crusted turkey or chicken are wonderful served with this; also, great with a simple mustard crusted turkey breast. This is also really good served with pork as well.
