Step 1: Bring a large pot of water to boil and add the chicken; reduce heat, cover and simmer until tender (30-40 minutes). Drain chicken and pat dry with paper towels. Cool completely.
Step 2: Cut chicken into 8 pieces. Cut long deep pockets in meaty part of each piece of chicken and fill each with 2 teaspoons of the seasoning.
Step 3: Heat oil in deep fryer or heavy skillet to 375 degrees F.
Step 4: In a large plate or pie dish combine the flour with the salt and pepper. In a separate pie dish put the eggs and in a third one put the breadcrumbs.
Step 5: Dredge the chicken in the flour mixture, then in the eggs and finally roll it in the breadcrumbs, coating the chicken thoroughly.
Step 6: Add chicken to skillet or deep fryer in batches and cook until golden brown - 2-5 minutes on each side. Drain on paper towels.
