Ingredients
- CAKE
- 2 cups gluten-free flour (rice blend flour)
- 1 1/2 cups granulated sugar
- 2 teaspoons xantham gum
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 can (20 ounce) crushed pineapple (in juice undrained)
- GOLDEN FROSTING
- 3/4 cup granulated sugar
- 3/4 cup evaporated milk (or coconut milk)
- 1/2 cup butter (or coconut oil)
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts
- 1/2 cup flaked coconut
How to Make

Step 1: Cake: mix all ingredients stir well before put in wet ingredients. put in oiled 9x13 pan. Bake 30 minutes while warm make frosting

Step 2: Frosting: use large saucepan. it will bubble up then cook down.

Step 3: Combine sugar, milk, butter & vanilla. Bring to a boil stirring until mixture is thick. Stir in nuts & coconuts then frost cake while warm
