Step 1: Fry eggplant in butter, remove, then add onions and tomatoes and parsley; cook minute
Step 2: In Pam-sprayed casserole.
Step 3: Layer eggplant, sauce then bread crumbs; repeat.
Step 4: Bake 30 minutes until browned and bubbly at 375 degrees.
