Step 1: Place the sugar, cinnamon, half the mint and 150ml of soda water in a saucepan over high het and bring to the boil, let it bubble away, stirring, until the sugar has dissolved.
Step 2: Reduce the heat and let the liquid simmer for 5 minutes, then take it off the heat and leave to cool, before straining it into a large glass jug.
Step 3: Pop the fruit and remaining mint into the jug with a handful of ice cubes.
Step 4: Pour in the wine, top it up with soda water, then serve.
