Step 1: Preheat oven to 325 degrees.
Step 2: Grind desired amount of seasoning on both sides of pork and set aside.
Step 3: Over medium heat add oil to a 10 inch cast iron skillet,heat until hot but not smoking.
Step 4: Add pork and sear on all sides until lightly browned.
Step 5: Place in oven and roast for 1 hour 15 minutes or until internal temp.reaches 160 degrees.
Step 6: Before cutting, let rest for 5 to 10 minutes so the juices can redistribute.
