Step 1: Preheat oven to 180C.
Step 2: Beat margarine and sugar in a small bowl with an electric mixer until pale in colour.
Step 3: Gradually add egg and vanilla extract, beating well after each addition.
Step 4: Stir in sifted flour; mix until well combined.
Step 5: Add Rice Bubbles cereal, choc bits and hazelnuts (if using); mix well using hands.
Step 6: Spoon level tablespoons of mixture onto baking paper lined oven trays.
Step 7: Bake in oven for about 12 to 15 minutes or until lightly browned.
Step 8: Stand for 5 minutes on trays; cool on wire racks.
Step 9: Sandwich biscuits together with chocolate spread.
Step 10: Store in an airtight container.
