Step 1: Preheat the oven to 150°C (300 °F).
Step 2: In a bowl, mix together the eggs, sugar, salt and milk.
Step 3: Add the flour and baking powder. Stir well.
Step 4: Add the melted butter. Set aside to rest for 20 minutes.
Step 5: Pass through a sieve if needed.
Step 6: If the mix becomes too thick, add a bit of milk.
Step 7: In a crepe pan, pour a bit of oil and heat over medium-high heat.
Step 8: Add about 45 ml (3 tbsp.) of the crepe mix.
Step 9: Tilt the pan to cover the whole surface.
Step 10: Brown both sides. Set aside.
Step 11: Repeat the same procedure to use all of the crepe mix.
Step 12: In a skillet, heat the butter and brown the apples lightly. Set aside.
Step 13: Spread the crepes out on a countertop.
Step 14: Place some of the apple and cheeseon each crepe.
Step 15: Roll and fold the ends inward. Place them on a baking sheet.
Step 16: Cook in the oven for 6 to 7 minutes until the cheese is melted.
Step 17: Serve the crepes with a dash of maple syrup.
