Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 whole egg
- 1 teaspoon lemon zest (or 1/4 teaspoon lemon extract)
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1 1/2 teaspoons xanthan gum
- 1 1/2 cup rice blend flour
- 1/2 cup powdered sugar
How to Make

Step 1: Preheat oven 350. grease baking sheet with on stick cooking spray set aside

Step 2: In large bowl cream butter and sugar til light and fluffy. add and beat vanilla, egg, lemon zest and juice. scrape bowl beat again.

Step 3: Stir ni dry ingredients except powder sugar. roll dough into teaspoon size ball and roll in powdered sugar place on baking sheet, bake, repeat
