Step 1: Peel the kohlrabi, then roughly grate. Cover with water. Add cumin and salt, stir then simmer about 15 minutes.
Step 2: Meanwhile, in skillet prepare a roux: sauté onions in lard and sprinkle flour brown add roux to kohlrabi, simmer together until thickened, and season with vinegar, caraway and sugar. Season to your taste then simmer 5 more minutes.
