Step 1: In a bowl mix together the fruit, honey and 1/3 ginger.
Step 2: In each bowl spoon 1/2 cup of the yogurt, top with 1/3 cup granola and the n 1/4 of the fruit mixture -- repeat for all servings. Spoon remaining yogurt in dollops over the fruit and garnish with chopped crystallized ginger.
