Step 1: Preheat the oven to 375F. Prepare a 9-inch round baking pan by coating with cooking spray or coating with butter.
Step 2: Sift the cake flour, baking powder, salt, cloves and nutmeg into a large mixing bowl.
Step 3: Cut the butter into the flour and rub it in using your fingers or a pastry cutter until the mixture resembles fine bread crumbs.
Step 4: Mix in sugar.
Step 5: Peel, core and dice the apples. Toss the pieces with the flour mixture.
Step 6: Beat the eggs and add a dash of milk. Add to the apples and flour and combine well with a large spoon.
Step 7: Add more milk as needed to fully moisten the flour. The dough will be sticky.
Step 8: Transfer the dough into the prepared cake pan and flatten the top surface using the back of a large spoon.
Step 9: Sprinkle two tablespoons of sugar over the top of the cake.
Step 10: Bake 45-50 minutes, or until a toothpick or knife comes out clean when inserted in the center of the cake. The top will be a golden brown.
Step 11: Cool for 5 minutes in the pan, then transfer to a wire wrack to finish cooling.
Step 12: Serve slightly warm.
