Step 1: Place corn in a bowl; slightly crush with a potato masher.
Step 2: Stir in chicken, egg, milk, melted butter and seasoned salt.
Step 3: Combine flour with baking powder and cayenne; stir into the corn mixture, just until combined.
Step 4: Season with black pepper.
Step 5: In a skillet heat 2 inches of oil to medium heat.
Step 6: Drop heaping tablespoonfuls into skillet, then fry for 3 minutes on each side or until golden brown.
Step 7: Drain on paper towels.
