Step 1: Brown onion in bacon grease until golden brown. Add in the flour, stir to brown it.
Step 2: Add cider and beef stock gradually; cook until slightly thickened.
Step 3: Add in the cloves, parsley and tomato puree; cook by gently simmering until reduced to 2 cups. strain season with salt and pepper.
