Step 1: Lightly coat the chicken in flour (this will help the batter stick) transfer to a plate and allow to sit for 5-6 minutes.
Step 2: Meanwhile in a bowl combine the pancake mix with club soda and remaining dry seasonings.
Step 3: Heat oil in a deep-fryer to 425 degrees F.
Step 4: Coat the strips in the pancake mixture then deep-fry in hot oil for about 6 minutes or golden brown.
