Step 1: Place all ingredients in a heavy non-reactive saucepan over medium heat.
Step 2: Cover and cook until apples are very soft, 10-15 minutes. Reduce temperature if apples start to boil over.
Step 3: Remove from heat and take out ginger and vanilla bean.
Step 4: Place apple mixture in food processor and puree into a smooth sauce.
