Step 1: Preheat oven to 500°.
Step 2: Place celery and parsley in a greased baking dish.
Step 3: Lay the fish on top.
Step 4: Pour wine over fish.
Step 5: Sprinkle with bread crumbs.
Step 6: Add salt, pepper and cayenne.
Step 7: Arrange mushrooms on top.
Step 8: Dot with butter.
Step 9: Bake, uncovered, for about 10 minutes, or until fish is cooked through, basting once with pan juices.
