Step 1: Place fruit in a large bowl.
Step 2: Add sugar and kirsch or other liquor.
Step 3: Gently lift the fruit with a spoon to distribute flavors.
Step 4: Cover and chill at least 1 hour.
Step 5: Remove and let stand at room temperature 20 minutes.
Step 6: Poke the mint sprigs around the top.
Step 7: Serve with clotted cream, if desired.
