Step 1: Melt butter in a large pot.
Step 2: Add onion, celery and carrot.
Step 3: Cook until the onion is translucent, 3-4 minutes.
Step 4: Add garlic, thyme, curry powder, bay leaf, and flour.
Step 5: Cook 3 minutes.
Step 6: Slowly stir in stock.
Step 7: Simmer for 25 minutes.
Step 8: Add apples, rice and lamb.
Step 9: Simmer for 20 minutes more.
Step 10: Stir in cream, salt and pepper.
Step 11: Serve hot.
