Step 1: Combine water, sugar, nutmeg and cinnamon stick in a pan and cook over very low heat until sugar dissolves.
Step 2: Increase heat and bring mixture to a boil.
Step 3: Boil rapidly one minute.
Step 4: Remove pan from heat.
Step 5: Put peaches in syrup and return to heat.
Step 6: Poach peaches over low heat for 3 minutes.
Step 7: Let fruit cool in syrup.
Step 8: Stir in Drambuie.
Step 9: Refrigerate at least 4 hours before serving.
