Step 1: Bring bouillon, vegetables, salt and pepper to a boil; cover and simmer 1 hour (30 minutes in pressure cooker).
Step 2: Strain and clarify.
Step 3: Add sherry and lemon juice, put in bowl add some avocado, top with sour cream and chive.
Step 4: Can be served hot or cold.
