Step 1: Preheat oven to 200C.
Step 2: Line a baking tray with alfoil and place a rack on top.
Step 3: Place bacon on the rack being careful not to overlap the bacon.
Step 4: Put in the oven and bake for 10 minutes.
Step 5: While this happening mix the Dijon and maple syrup with a whisk.
Step 6: Remove from oven and pat the bacon for any fat with paper towel.
Step 7: Brush both sides of the bacon the maple syrup Dijon mustard mix and put back in the oven for 5 minutes or cooked to you liking.
