Step 1: Set aside 1 cup grated cheese and make the filling by combining all other ingredients together in a mixing bowl and fill the cannelloni tubes with this mix.
Step 2: In a greased ovenproof baking dish place a single layer of the filled cannelloni tubes side by side.
Step 3: Pour over béchamel sauce, completely covering the cannelloni tubes.
Step 4: Sprinkle 1 cup grated cheese and parsley over cannelloni.
Step 5: Bake in oven at 210C degrees for 35 minutes (test by pricking with a skewer).
Step 6: Béchamel Sauce - Melt butter in a saucepan.
Step 7: Add flour and mix with the butter until smooth, remove from the heat.
Step 8: Gradually add the milk, stirring constantly.
Step 9: Return to the heat stirring constantly until thick and smooth.
Step 10: Add salt and pepper and nutmeg.
