Step 1: Mix together the beef, minced onion, beef bouillon granules, flour, egg, garlic, oregano and pepper and form into 4 patties about 1" thick.
Step 2: Heat oil in a large skillet over medium heat, add patties and cook until you have nice golden brown crust on both sides about 5 minutes per side; remove patties from skillet and set aside.
Step 3: Prepare gravy by adding the mushrooms and garlic to skillet and cook while scrapping up the browned bits until mushrooms start to soften and sweat, about 5 minutes.
Step 4: In a large measuring cup, whisk the remaining gravy ingredients together, return the patties to skillet. and pour in the beef stock mixture and bring to a boil; reduce heat and simmer for 15 stirring every so often so it doesn’t bubble over. (The sauce may have a frothy texture at first but that will disappear while simmering).
Step 5: Remove bay leaf and serve.
