Step 1: Heat oven to 450 degrees F.
Step 2: In a bowl whisk together the dry ingredients (flour - baking soda); using a pastry cutter or two knives work the butter into the mixture until the butter is the size of small peas.
Step 3: Add the buttermilk, cheese and chives to the mixture, stirring with a fork to combine and to form a loose dough.
Step 4: Turn dough out onto a floured surface and pate into a 6"x9" rectangle; fold in thirds and pat into a 6 x 9" rectangle again.
Step 5: Dip edges of a 3" round biscuit cutter (we use a coffee cup) into flour and punch out the biscuits (you should get 6 or more depending on the size of the cutter/coffee cup). Scrap leftover dough and pat together to cut out a few more biscuits, if you wish).
Step 6: Transfer biscuits to a parchment covered cookie sheet.Brush tops with cream.
Step 7: Bake until browned (14-16 minutes).
