Step 1: Melt butter in pan over low heat.
Step 2: In a bowl mix the fresh breadcrumbs. melted butter, grated cheese 2 of the eggs and salt and pepper. Mix really well with a fork, then form into small balls about the size of a walnut.
Step 3: Beat remaining egg with fork.
Step 4: Dip balls into eggs and then dried breadcrumbs to coat well. Place balls in fridge, whilst heating oil.
Step 5: Heat oil until hot.
Step 6: Fry the balls/croquettes in the oil a few at a time, until golden in colour.
Step 7: Remove with slotted spoon and place on absorbent towel to absorb excess oil.
Step 8: Serve hot.
