Step 1: Place apples in a bowl with sugar and cinnamon. Mix well.
Step 2: Cut pastry sheets into quarters.
Step 3: Spoon 2 tablespoons of the apple mixture and 1 teaspoon jam onto one half of each pastry square.
Step 4: Brush each square with a little of the egg around edge of pastry.
Step 5: Fold over pastry to enclose filling, then pinch and fold edges to seal.
Step 6: Place turnovers on oven trays lined with baking paper.
Step 7: Brush tops with remaining egg.
Step 8: Cook in a hot oven (200C) for 20 minutes, or until pastry is golden brown.
Step 9: Sprinkle with some sifted icing sugar if desired.
Step 10: The turnovers are best served warm.
