Step 1: Slice the pork tenderloin into 1/4 inch thick rounds.
Step 2: Drizzle 2 tablespoons olive oil in a skillet and bring to medium-high heat and add the pork rounds.
Step 3: Season the meat with garlic powder, salt and pepper and brown both sides for about 3 to 4 minutes, until you have a light golden crust.
Step 4: Place the cooked rounds in a casserole dish and set aside.
Step 5: Drizzle 1 tablespoon olive oil into the same pan and toss in the vegetables, cook until softened while scrapping up the bits left on bottom of pan; pour over the pork slices.
Step 6: Sprinkle the dried herbs over the vegetable mixture then pour the pasta sauce over everything.
Step 7: Sprinkle the Parmesan cheese evenly over the sauce; cover the casserole dish and cook at 350 degrees Fahrenheit for 2 hours.
