Step 1: Preheat grill to high.
Step 2: Brush 1 tablespoon oil lightly over lamb on both sides.
Step 3: Season with salt and pepper. Set aside.
Step 4: Combine 1/4 cup oil, onion and mustard in a small, heavy saucepan. Bring to a boil, stirring.
Step 5: Reduce heat to low and simmer gently until the onion is soft, about 10 minutes, stirring frequently.
Step 6: Use water to thin mixture to sauce consistency.
Step 7: Add sugar if sauce is too tart.
Step 8: Remove from heat and cover to keep warm.
Step 9: Oil grill grate.
Step 10: Grill chops to desired degree of doneness, turning with tongs, 6-8 minutes per side for medium.
Step 11: Transfer chops to plate and spoon sauce on top.
