Step 1: Pre-Heat oven to 400f.
Step 2: Unroll pastry on a lightly floured cutting board. Sprinkle with the bacon and cheese to within 1/4 inch of one short side.
Step 3: Roll up, jelly roll style, starting at the opposite short side. Place on parchment covered baking sheet. Freeze for 15 minutes or until firm.
Step 4: Cut into 1 inch pieces.
Step 5: Place cut side up on parchment covered baking sheet. Brush with egg.
Step 6: Bake until golden apprx 17-20 minutes.
Step 7: Cool 1 minute, then place on wire rack, cool completly.
