Step 1: In a large resealable bag, place orange juice concentrate, lemon juice, hoisin sauce, oil, sugar, ginger and garlic. Seal and shake to mix. Add chicken, seal and shake to coat evenly. Refrigerate overnight, or up to 3 days.
Step 2: Preheat oven to 400 degrees F.
Step 3: Line a large sheet pan with aluminum foil. Spray foil lightly with cooking spray.
Step 4: Spread wings or thighs on foil. Sprinkle with a few red pepper flakes, if desired.
Step 5: Discard marinade.
Step 6: Bake for 45 minutes, until brown and shiny, turning after 25 minutes. Thighs may require another 5 minutes roasting time!
Step 7: Transfer to serving platter and sprinkle with scallions.
