Step 1: Coat your slow cooker with nonstick cooking spray.
Step 2: Combine the olive oil, shallots, and garlic in the bottom of the slow cooker.
Step 3: Combine the flour, salt, and black pepper. Coat the chicken with the mixture and add to the slow cooker. Scatter the mushrooms over the chicken and add the Marsala.
Step 4: Cover and cook on low for 4 hours.
Step 5: Drain the liquid into a small saucepan and bring to a simmer. Combine the cornstarch with 2 teaspoons of water and stir into the saucepan. Simmer for 1 minute and add back into the slow cooker. Stir in the parsley.
Step 6: Serve the chicken with the sauce.
