Step 1: Pre heat oven to 180c.
Step 2: Beat egg whites and salt until stiff. Gradually add the sugar and still beat until thick and glossy.
Step 3: Add egg yolks one at a time, beating well after each addition, then add the vanilla.
Step 4: Sift the plain flour with the corn flour and baking powder - do this 3 times, and the fold into the egg white mixture.
Step 5: Divide mixture into 2 well greased 18cm sandwich tins.
Step 6: Bake at 180c for 20-25 minutes.
Step 7: Cool on a wire rack, and when cooled fill with sweetened cream and ice with passionfruit icing.
