Step 1: Preheat oven to 400 F In medium sauce pan bring milk and butter up to simmer over medium heat then add the flour all at once and stir constantly until combined about 3 minutes, lower heat to low continue to cook for 2 more minutes dough will be dry, may leave a little flour to bottom of pan. Remove from heat directly place hot mixture in food processor pour the 2 eggs in and pulse about 30 seconds to combine. The dough will be sticky.
Step 2: Place dough mixture in piping bag with 1/2 inch round pastry tip. Holding bag upright make 18 profiteroles about 2 inches wide and 1 inch high, take a wet finger tip to push down the tip to make them smooth before placing in oven for 15 minutes until puffed and golden brown. Remove from oven and make a 3/4 inch slit in the side to let the steam escape, let dry on rack and cool completely before filling.
Step 3: For filling, mix in mixer with paddle attachment cream cheese until creamy, add butter beat until well incorporated, add brown sugar and beat until light and fluffy, add the powdered sugar half at a time mix well then to finish add vanilla until all are combined. It is now ready to pipe into profiteroles that have been cut in half, place tops on and drizzle with chocolate or powdered sugar for garnish. Eat and enjoy
