Step 1: Over medium heat in a medium size skillet add oil and heat until hot but not smoking add onion and cook until softened.
Step 2: Add potatoes and cook until lightly browned,remove from skillet and keep warm.
Step 3: If needed,place 1 Tablespoon oil in skillet then add steak and warm through.
Step 4: Return potato/onion mixture to skillet,pour eggs over all then sprinkle with desired amount of seasonings.
Step 5: Scramble all ingredients, until desired consistency for eggs are reached.
Step 6: If desired,sprinkle with cheese.
