Step 1: Place all ingredients in a blender and blend until smooth. Allow batter to sit while griddle is preheating.
Step 2: Preheat griddle to 375°. Spray with a gluten free non-stick cooking spray. Drop batter by 1/4 cup onto hot griddle. Allow to cook until tops bubble and edges are brown, flip and cook other side until brown.
Step 3: Serve with fresh berries, sliced banana or other fruits. Drizzle lightly with maple syrup if desired.
